Cream of Mushroom Chicken w/ Rice

Ingredients

1 can cream of mushroom soup
3 large chicken breasts (or 4 small/med)
1 package of white mushrooms
3 tbs all purpose flour
1 1/4 c basmati brown rice (or regular brown ric
1 lb broccoli
2 tbsp olive oil
1/3 c milk
2 tbsp Butter

Instructions

You can grill the chicken (preferable).  If so, skip step 2-3 and instead grill chicken and then chop into bite size pieces.  For extra tender chicken, brine in salt bath for a couple hours.

1.  Cook rice.  Add 2 3/4 cup water, rice, 1 tbsp butter, pinch salt to pot, cook on high until boiling, reduce to a simmer, cover, cook until ready (45 mins).
1.  Slice chicken across grain into 1/4 inch strips, cutting bigger strips in half.  Sprinkle chicken with salt and pepper.
2.  Heat fry pan over med-high heat, add 1 tbsp oil; add chicken 1 minute later.  Cook until no longer pink
3.  While chicken is cooking, wash and slice mushrooms heat large saucepan add 1 tbsp oil; wait 1 min, add mushrooms, cook until tender and reduced (5-7 mins).
4.  Move mushrooms to one side of pan; add butter, add flour after melted, mix in with mushrooms
5.  Add mushroom soup to mushroom mixture; stir until mixed in
6.  Mix in milk, keep adding milk until mixture is slightly thicker than heavy cream
7.  Add chicken to mushroom mixture; simmer for 5 minutes
8.  Wash and cut broccoli into pieces; place in pot, cover bottom of pot with water; cook on medium covered until tender.
9.  Serve chicken & mushroom over rice with broccoli on the side
